Well, it’s been a nice long weekend. Can’t complain about that. I realize that I missed Saturday Sweets this weekend. Umm, no excuse really. BUT. Next Saturday? Get ready and tune in for something fantastic!!!

This morning, I woke up and went for a run. The sun was already high in the sky, and I was sweating bullets. Now I am home, freshened up, coffee drank, pics edited for this post, Jack Johnson singing in the background. I love spending time the way I wish to spend it. Later today, my time will be spent memorizing psychological disorders. I have an exam tomorrow to study for. Only THREE more weeks of class. I am counting down like never before.

Between classes and studying 90% of the time, I try to keep life fun! I especially love to capture these everyday, fun moments. And I am working on my photography, so taking pics means sharing them with you!

Kevin and I took a day-trip to Kalamazoo. It was a great day of lunch at Kev’s favorite restaurant, walking around downtown, and spending time with family. Here are some pics from our day:

The past two weekends have been filled with wedding goodness. First, Jonathan and Annie got married! And then, Dan and Grace! Congrats, friends! ๐Ÿ™‚

Happy Saturday!

This past week, I was joined by one of my best friends Kristina to make a special birthday treat for my friend Nick! There was a whole lot of sweetness happening in my kitchen. Kristina just got back from Spain and it was so wonderful being with her again, baking up some goodness! I knew we had to make something vegan and it proved to be a little difficult. Finding a recipe with no butter, milk, cheese, ect?? Never had I tried this before! After searching for a recipe that would not require us to go the store, we settled on Vegan Chocolate Cupcakes from this blog: Instead of making the frosting that was paired with these cakes, we decided to go with peanut butter. Vegan: check. Easy: check. ๐Ÿ˜€

These cupcakes were delicious! They were different tasting, of course, but if you’re in the mood for trying something new or you have to bake for a vegan friend, I would definitely suggest these.

Hello, friends.

I’ve been in the kitchen for the majority of the afternoon, baking, listening to some tunes, birds chirping outside. The thought occurred to me to start a weekly, Saturday post on my ongoings in the kitchen… I’m starting today! ๐Ÿ˜€ The post will be called Saturday Sweets. Mostly, it will just be pictures of my baked goods and cookings. I will also include where I got the recipe from so you can go find it if you’d like! This is partly for myself, so I can remember everything I make… and also for you. I LOVE getting recipes online and if you have a taste for doing some baking or cooking, this may be a good place to get some ideas!

I’m posting what I have made in the past couple weeks (though my “usual” post will only feature one or two recipes).

That last picture, I took a chomp out of it just for affect. But really, the cookie was heavenly so I ate the rest! YUM. Enjoy!!!

This past week, I did my best at capturing some outdoor pictures. I even went on a couple walks outside with the intent of getting some good ones. I’m loving on some spring weather… the sun is shining, trees and flowers are blooming, and summer is on it’s way! Woohoo!

This last one may or may not really fit into the “outside” category but hey, who could resist a pup like this? World, meet Snickers. He will be mentioned on my blog a lot this summer because we spend quality time together everyday. He’s the best.
